Pepe Jijon, formerly a mountain guide who conquered the seven summits and explored over 100 countries, found his calling when he purchased Finca Soledad in Ecuador's Intag Valley in 2010, seeking peace and connection with nature. Despite inheriting deforested land, Pepe and his team have planted 25,000 trees and transformed the 4-hectare coffee farm into a flourishing sanctuary where they cultivate premium Typica Mejorada, Sidra, and Geisha varieties. The farm utilizes the unique local ecosystem with partial shade systems that protect plants during dry seasons while allowing proper airflow when wet. Beyond coffee production, Finca Soledad represents Pepe's commitment to economic and environmental sustainability, primarily employing local women and single mothers to provide stable income and protect the community from the mining industry's negative impacts. TyOxidator Washed

TyOxidator Washed is a distinctive coffee processing method that focuses on controlling the oxidation of the beans during fermentation. After harvesting, the coffee cherries are placed in a specialized machine, the TyOxidator, which regulates the exposure to oxygen, optimizing the fermentation process. This results in a more controlled, uniform fermentation, enhancing the clarity and brightness of the final cup.
